The "What's for dinner?" Blues

What's for dinner? The dreaded question that I have to ask myself every single day. So after almost four years you would think I would have plenty of answers to this simple question, but alas I do not. I saw on someones blog recently that they had been tagged and had to list all the meals on their menu for the week. Mine would be a whole lot of I don't knows! It seems like every day the same thing happens when Corey gets home from work.

Corey: What's for dinnner?
Me: I don't know, what do you want?
Corey: Whatever you want to make me.
Me: I want to make you whatever you want.

And on it goes until I say a couple choices and he chooses between them. I really don't mind the actual cooking part. I just hate the deciding part (big shocker, huh?! Me, decide something?), and it doesn't help when your hubby is a picky eater. I usually end up with a few ideas in my head and we end up having them over and over again until I think of something new.

So if anybody has any yummy ideas that your family loves, I would love to get some new ideas!

Here is a recipe that Corey and I love, just in case you are in the same boat as me and want something new!

Chicken Manicotti

1 teaspoon garlic salt
1 1/2 lbs chicken breast tenders
14 uncooked manicotti
(2 1/2 ounce) can sliced ripe olives, drained, optional
1 (30 ounce) jar spaghetti sauce, any variety
2 cups shredded mozzarella cheese
1/2 cup water

Directions:
1. Spread about 1/3 of the spaghetti sauce in ungreased rectangular baking dish, 13x9x2 inches. 2. Sprinkle garlic salt on chicken and cook.
3. Insert cooked chicken into uncooked manicotti shells, stuffing from each end of shell to fill if necessary.
4. Place shells on spaghetti sauce in dish.
5. Pour remaining spaghetti sauce evenly over shells, covering completely.
6. Pour 1/2 cup water around edges of baking dish
7. Sprinkle with olives and cheese.
8. heat oven to 350 degrees.
9. Bake in covered baking dish about 1 hour, or until shells are tender.

WHAT???? I will eat anything you make.....Except for gross stuff like stew or vegy's!!! I am very easy to please....HA HA!!! I love you babe and keep up the good work.

Unfortunately I am in the same boat, I have a very picky family and can't seem to find something everyone will not complain about each night. I make myself a list for the week and then just choose those things. It is usually the same things over and over, like tacos, spaghetti, pizza, etc.

I have found one thing that everyone really seems to love and they all get excited when I make it. That is chicken quesadillas. It is really easy.

Just cut or tear 3 large cooked chicken breasts into bite sized pieces and mix with your favorite salsa (as much as you like to your taste). You can also use taco seasoning instead of salsa. Then just add a little bit of oil or spray to the bottom of a fry pan on medium heat. Place a tortilla in the pan, sprinkle in some chicken and your favorite cheese. Fold it over and cook till crisp on each side and cheese is melted. Serve with sour cream and salsa! Makes about 10 quesadillas depending on how much chicken you like inside.
